Upside down cakes have been around since the 1800s, but the style of baking with fruit and cakes dates as far back as the Middle Ages with what was known first as skillet cakes. These were basically upside down cakes cooked in cast iron skillets. As kids we often had upside down cakes and for generations it has been brought to potluck and family gatherings.
I wanted to bring back this warm tradition for my kids. Well of course ours always has to have a lavender twist to it! Our White Lavender Cake Mix is similar to a sponge cake. Dense with a burst of beautiful lavender flavor.
Peach Lavender Upside Down Cake
1 Package Lavender Cake Mix
3/4 cup water
2 Tbsp oil
Slice two fresh peaches in 1/4 inch slices. Set aside.
Line a 9 inch baking pan with parchment paper greased with butter. Layer your peaches in a circular pattern on the bottom of your pan on top of buttered parchment paper.
In a medium sized mixing bowl make Lavender Cake Mix according to package instructions. Pour prepared cake batter over your layered peaches.
Bake at preheated 350º F oven for 45-50 minutes or until a toothpick inserted comes out clean.
Let cool for 10 minutes, then dump your cake out of pan onto serving tray.
