Summer is time for sitting on the porch and taking a few minutes to enjoy life while sipping on some ice cold tea! We love tea concentrate in the summer when you want to make up a glass of ice tea really fast. What is tea concentrate you ask...it is simply a double-strength tea brew that you dilute with boiling water before serving. Almost all of the measuring, timing, and straining is done beforehand so you can make up a quick tea when you want it. We have several flavors of tea that would work for this but for today's recipe we used the Lavender Earl Grey Tea, but we have Lavender Rose and a Lavender Chamomile that is a herbal blend if you are looking for a caffeine free option. Lavender Earl Grey Tea Concentrate
1/4 cup Lavender Earl Grey Tea 4 cups water 1/2 cup Lavender Simple Syrup (or to taste) In a medium sized pan, fill with your water and your Lavender Earl Grey Tea. Bring to a boil, turn your heat down to keep to a simmer and place lid on to simmer for 10 minutes. Remove from heat and strain. When it is cooled add your Lavender Simple Syrup. This will last in your refrigerator for about 3 days. How to use your concentrate 1 part tea concentrate 1 part water or milk Ice Mix together and enjoy! Floral ice cubes are such a treat to add to your water, carbonated beverages, mocktails, cocktails, iced coffee and tea or any drink you can think of. You can use almost any combination of fruits and culinary flowers and herbs. There are several tips out there to try to get your ice cubes as clear as you can. The clearer the ice the more detail of your ice you can see. Here are a few that I found. Use filtered water, boil your water first and let cool before pouring into ice cubes, and the last use hot water and pour over your choice of additions. I used the boil your water, fill your trays and place in freezer. We chose to use lavender, mint and lemon strips for one and lemon, blueberry, lavender for another version. Most frozen fruits will sink and most fresh items added will float, but this adds the variety you may desire in your ice cubes. Freeze until frozen but if it is left to long in the freezer they can discolor some florals. So the best recommendation is to use them up quickly. Lay your Lavender Cocktail Picks in mold and pour water over top. We made half of these ice cubes with Lavender, lemon triangle and blueberries and the other half with Lemon peel curls, mint and lavender. ![]() We liked the lavender cubes that had the lavender at the top of the cube. We had pressed one down but it doesn't look as nice. The thin cubes melt very fast but that isn't bad...you've got your adorable little lavender stem floating in your drink. For photos our water sat in the trays. You will want to put the in the freezer right away or it blueberries can turn your cubes a little purple. That's ok...we still like them and they added nice color in our lavender lemonade. You can get culinary lavender picks here.
If you are making ice cubes for a party you can use your ice mold of choice. When the are ice cubes are frozen (about 4 hours) remove them from mold and stick them 1 layer thick in a sealed container. Work fast so they don't melt. Enjoy! Florals are making an impact in many events and weddings for 2020! So many versatile ways to use flowers in food whether it is uses as fancy floral ice cubes, sprinkled in salads, or salad dressings, frosting and decorating your cake with lavender frostings, drizzling cheese with lavender honey and desserts, flavoring cocktails or used as a skewer it is adding the dramatic, romantic effect that so many are going for in their menu planning. Lavender is the floral favorite when it comes to elevating the romance and flavor in whatever you choose to put it in.
Lavender is being used not only in cakes, but as lavender cream frostings or fillings. Decorated on the outside of the cake makes a simple minimalistic but sophisticated impact. Bakeries are doing this by adding lavender extract, and Culinary Lavender. If your baker needs some guidelines we have that here.
